Black Bean/Corn Salad

  • 4-5 cooked ears of corn
  • 1 c. of black beans drained
  • 2 T. of chopped red pepper
  • 2 chopped green onions
  • 1/4 c. chopped cilantro
  • 1/4 - 1/2 t. of cumin
  • Garlic Salt, black pepper to taste
  • 3 T. Balsamic vinigar or red wine vinigar
  • 2-3 T. olive oil

Directions

    Cut off the corn from the cob. Mix with the remaining ingredients. Toss with the vinigar and oil. Serve
