Black Bean Enchiladas

  • 12 whole wheat tortillas
  • 24 ounces black beans (either canned or presoaked and cooked)
  • 1 small onion, diced
  • 1 (6 ounce) can diced green chilies
  • 1 zucchini, diced
  • 10 ounces black olives
  • 12 ounces enchilada sauce
  • 1 cup cheese
  • 1 cup sour cream

Directions

    Sautee onions, add zuchini and cook until slightly softened.

    Add black beans.

    Spread approx 1/3 cup of mix on each tortilla and place in pan seam side down.

    Pour Enchilada sauce over top and spread cheese.

    Bake in oven at 350 degrees for approximately 25-30 minutes until the cheese is bubbly.

    Add sour cream just before serving.
