Ingredients

  • 12 oz. uncooked bowtie pasta
  • 6 to 8 garlic cloves, diced
  • 1/4 c. olive oil
  • 2/3 c. fresh Key lime juice
  • 1/2 c. sherry
  • 2 c. sliced green onions
  • 1 lb. plum tomatoes, chopped
  • 2 (15 oz.) cans black beans, rinsed and drained
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 1/2 Tbsp. grated Key lime rind
  • 1/2 c. chopped fresh parsley

Directions

    Cook pasta according to package directions, drain and keep warm.

    Saute garlic in oil in skillet until tender.

    Add lime juice and sherry, cook over high heat 5 minutes or until mixture is reduced to 1/4 cup.

    Add green onions and chopped tomato. Cook over medium heat, stirring occasionally, for 5 minutes.

    Stir in black beans and next 3 ingredients.

    Pour over pasta, toss to coat.

    Sprinkle with parsley, serve immediately.
