- 2 c. black beans (canned), rinsed and drained
- 1 small can niblets canned corn (fat regular can), drained
- 1 tsp. Italian herbs
- 1 tsp. salt
- 1 c. fresh tomatoes, chopped
- 1 c. diced avocado
- 1/3 c. thinly sliced green onions
- 1/3 c. finely chopped cilantro or parsley
- 1/4 c. olive oil
- 2 Tbsp. red wine vinegar
- 1 garlic clove, minced
- 1/2 tsp. chili powder
- 1/4 tsp. cumin
Directions

1Mix dressing of oil, vinegar and spices.

2Add black bean mixture (first 8 ingredients).

3Correct for more herbs or cumin if needed. Chill.

4Really delicious; you might want more vinegar too.
