Ingredients

  • 2 c. black beans (canned), rinsed and drained
  • 1 small can niblets canned corn (fat regular can), drained
  • 1 tsp. Italian herbs
  • 1 tsp. salt
  • 1 c. fresh tomatoes, chopped
  • 1 c. diced avocado
  • 1/3 c. thinly sliced green onions
  • 1/3 c. finely chopped cilantro or parsley
  • 1/4 c. olive oil
  • 2 Tbsp. red wine vinegar
  • 1 garlic clove, minced
  • 1/2 tsp. chili powder
  • 1/4 tsp. cumin

Directions

    Mix dressing of oil, vinegar and spices.

    Add black bean mixture (first 8 ingredients).

    Correct for more herbs or cumin if needed. Chill.

    Really delicious; you might want more vinegar too.
