  • 2 c. black beans, cooked
  • 2 garlic cloves, chopped
  • 1 c. chopped onions
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander or chopped fresh coriander
  • 2 large carrots
  • 2 yellow zucchini squash
  • 3 green or red chili peppers
  • 3 to 4 really ripe tomatoes

Directions

    Cook beans. I use a pressure cooker; cover with enough water, 3-inches above beans, and cook 15 to 20 minutes.

    Drain excess water.

    Blanch carrots and squash. Cut into cubes.

    Chop tomatoes. Combine. Can use as salsa or as filling for burritos.

    Combine with rice if desired.
