  • 1 1/2 c. frozen white Shoe Peg corn kernels
  • 1 1/2 c. ripe tomatoes, diced
  • 1 bunch scallions, sliced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1/2 c. vegetable oil
  • 1/3 c. red wine vinegar
  • 1 Tbsp. Worcestershire sauce
  • 2 to 3 tsp. Tabasco sauce
  • 2 tsp. cumin
  • 3/4 tsp. salt
  • 1/2 tsp. white pepper
  • cilantro to taste (optional)
  • chopped garlic to taste (optional)
