- 2 c. sliced red, green, yellow peppers, 1-inch wide
- 2 cloves garlic, crushed
- 1 (15 oz.) can black beans, undrained
- 2 Tbsp. minced cilantro
- 1/2 c. chicken broth
- 1 Tbsp. cornstarch
- 3 c. hot cooked white rice
- lime wedges (optional)
- sprigs of cilantro (optional)
