- 2 c. black beans
- 3 qt. water
- 1/4 lb. salt pork
- 1/2 lb. lean beef, cut in small pieces
- 1 carrot, diced
- 3 small onions, minced
- 3 cloves
- 1/4 tsp. mace
- dash of red pepper
- 3 hard-cooked eggs, sliced
- 1 lemon, sliced
- 1/2 c. sherry
Directions

1Wash and clean beans; soak overnight.

2In morning, sort beans carefully and put in stock pot with 3 quarts water.

3Add salt pork, beef, carrot, onions, cloves, mace and red pepper.

4Cover and cook slowly 3 hours or until beans are very soft.

5Rub through sieve.

6Place hot bean liquid and puree in a tureen.

7Add egg slices, lemon slices and sherry.
