  • 1 lb. black beans
  • 3 qt. water
  • 2 tsp. salt
  • 1 tsp. coarsely ground black pepper
  • 1 large onion
  • 1 stalk celery with leaves, chopped
  • 2 large cloves garlic
  • white part of 1 leek
  • 1/4 c. salad oil
  • 1 large bay leaf
  • 1/2 c. Madeira or sherry
  • 2 lemons, thinly sliced
  • sour cream
