- 1 lb. dried black beans
- 2 Tbsp. oil
- 1 Tbsp. olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 tsp. salt
- dash of pepper
- 1 green pepper, chopped
- 1/2 tsp. dried oregano
- 1 bay leaf
- 1 Tbsp. honey
- 2 Tbsp. vinegar
- 2 Tbsp. dry white wine (optional)
Directions

1Soak beans overnight.

2Boil for 1 hour.

3Saute vegetables and herbs in oil and add to pot.

4Simmer until tender, about 2 to 3 hours.

5If you want them creamier, remove 1 cup beans, mash or cream in blender and return to pot.
