- 2 c. dried black beans
- 1 beef bouillon cube
- 1 chicken bouillon cube
- 1 green pepper, finely chopped
- 3/4 c. chopped celery
- 1 small can onion, chipped
- 3/4 c. diced carrots
- 1 bay leaf
- 2 cloves garlic, crushed
- 2 Tbsp. olive oil
- salt and pepper to taste
Directions

1Soak beans overnight.

2Drain and add 8 cups cold water.

3Cover and simmer 1 1/2 hours.

4Add remaining ingredients and simmer until beans and vegetables are tender.

5Serve with dollops of sour cream.
