- 1 lb. black beans
- 1 medium onion
- 2 or 3 garlic cloves
- salt to taste
- 1 small onion
- 2 Tbsp. shortening
Directions

1Clean and wash the black beans.

2Cover beans and soak overnight.

3Use same water, medium onion (chopped finely) and salt to taste.

4Add garlic, if desired.

5Allow beans to boil until the liquid has thickened and has nearly boiled away.

6Put the beans through a food grinder.

7This will be a paste.

8Chop the small onion and fry in the shortening.

9Add paste with sufficient water to make desired thickness.

10Cook slowly for 10 to 15 minutes. Serve with croutons or fried tortilla strips.
