- 1 lb. black beans
- 1 medium onion, chopped
- 1 green pepper, chopped
- 4 garlic cloves, chopped
- 2 bay leaves
- 1 tsp. oregano
- 2 tsp. ground cumin
- 3/4 tsp. black pepper
- 1/4 c. vinegar
- salt or bouillon cubes to taste
Directions

1Wash beans thoroughly.

2Soak overnight in 4 times their volume of water.

3Drain.

4Cover with water, and bring to a boil.

5Reduce to simmer, add other ingredients.

6Cook until beans are tender. Add more water if needed.
