- 1 pound Dried Black Beans
- 1 Onion, chopped
- 6 cloves Garlic, minced
- 8 slices Uncooked Bacon, diced
- 1 cup Cilantro, chopped
- 1 1/2 teaspoons Whole Cumin Seed
- 1 teaspoon Dried Oregano
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 4 quarts Water
Directions

1Sort beans and place in a large heavy kettle. Add enough water to cover. Place lid on the kettle and bring to a boil. Boil hard for exactly one minute. Remove from heat. Let stand, covered, one hour.

2Drain beans in a colander. Put beans back into kettle. Add all the remaining ingredients, and enough water just to cover.

3Simmer beans over low heat for 3-4 hours, or until they are tender. Add small amounts of water as necessary during cooking. Finished beans should be thick, not soupy.

4Adjust salt and pepper to taste.
