  • 1 c. corn meal
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg
  • 1 c. buttermilk
  • 1 c. cracklings, cut into small pieces

    Sift corn meal, salt and soda together over cracklings.

    Mix well.

    Combine buttermilk and beaten egg.

    Stir into corn meal mixture.

    Pour into a hot, greased bread pan.

    Bake at 450° for about 25 minutes or until brown.
