Black Beans and Corn

Ingredients

  • 15 ounces black beans, drained and rinsed
  • 1 12 cups frozen corn (I used a 10 oz box)
  • 12 cup chopped green bell pepper
  • 12 cup chopped red bell pepper
  • 12 cup chopped onion
  • 14 cup pickled jalapeno pepper, slices
  • 1 cup picante sauce
  • 2 tablespoons extra virgin olive oil

Directions

    Preheat oven to 350F.

    Place oil in pan and saute onions for 4 minutes or until tender.

    Add all of your peppers and saute for 3 minutes or until tender.

    Add the rest of the ingredients and stir until well mixed and heat through.

    Serve with tortillas, rice or as a side dish for chicken.
