Ingredients
- 1/2 c. plus 1/8 c. dried black beans
- vegetable cooking spray
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 2 cloves garlic, minced
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/2 Tbsp. red wine vinegar
- 1 1/2 c. water
- 3 oz. can tomato paste
- 1 1/2 c. hot cooked rice
- 1/4 tsp. chopped tomato
- 1/2 tsp. sugar
- 1/8 c. sliced green onions
- 2 tsp. plain nonfat yogurt
Directions

1Sort and wash beans.

2Place in a Dutch oven.

3Cover with water 2-inches above beans.

4Let soak 8 hours.

5Drain.

6Coat a Dutch oven with cooking spray.

7Place over medium-high heat until hot.

8Add onion, green pepper and garlic.

9Saute until tender.

10Add beans, salt, pepper, chopped tomato, water and vinegar.

11Bring mixture to a boil.

12Cover, reduce heat and simmer 1 1/2 hours until beans are tender, stirring occasionally.

13Add tomato paste.

14Cook an additional 15 minutes.

15Serve over rice.

16Top each serving with tomato, green onions and yogurt.
