Ingredients

  • 1/2 c. plus 1/8 c. dried black beans
  • vegetable cooking spray
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 2 cloves garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 Tbsp. red wine vinegar
  • 1 1/2 c. water
  • 3 oz. can tomato paste
  • 1 1/2 c. hot cooked rice
  • 1/4 tsp. chopped tomato
  • 1/2 tsp. sugar
  • 1/8 c. sliced green onions
  • 2 tsp. plain nonfat yogurt

    Sort and wash beans.

    Place in a Dutch oven.

    Cover with water 2-inches above beans.

    Let soak 8 hours.

    Drain.

    Coat a Dutch oven with cooking spray.

    Place over medium-high heat until hot.

    Add onion, green pepper and garlic.

    Saute until tender.

    Add beans, salt, pepper, chopped tomato, water and vinegar.

    Bring mixture to a boil.

    Cover, reduce heat and simmer 1 1/2 hours until beans are tender, stirring occasionally.

    Add tomato paste.

    Cook an additional 15 minutes.

    Serve over rice.
