  • 1 small bag black beans
  • 1 c. chopped green pepper
  • 2 bouillon cubes (chicken)
  • 1/2 tsp. pepper
  • 2 Tbsp. wine vinegar
  • 1 Tbsp. oil
  • 1 c. chopped onion
  • 5 cloves garlic, minced
  • 1 tsp. salt
  • 1/4 tsp. crushed red pepper
  • 6 oz. can tomato paste
  • cooked rice
  • sour cream
  • chopped tomato and onion

Directions

    Soak beans in water for 6 hours; drain.

    Or for faster preparation, bring beans to a simmer; turn off and let sit for 1 hour, then drain.

    Saute until tender the oil, onion, green pepper and garlic.

    Add to drained beans.

    Cover beans with water, just barely.

    Add bouillon cubes, salt, pepper, crushed red pepper and wine vinegar.

    Lamb shanks or pork can be added now (optional).
