- 1 (16 ounce.) pkg. dry black beans
- 1 med. size green pepper, minced
- 1/4 c. minced onion, divided
- 2 1/2 quarts. water
- 2 cloves garlic, chopped
- 1/2 teaspoon dry whole oregano
- 1/4 teaspoon grnd cumin
- 1 teaspoon salt
Directions

1Sort and wash beans.

2Combine beans, green pepper and 2 Tbsp.

3onion in a large Dutch oven.

4Cover with water and cook.

5When boiling good, turn heat down and simmer for about 2 hrs till beans are tender.

6Combine remaining onion, garlic, oregano and cumin in a small bowl.

7Mash mix using a fork.

8Stir in vinegar and salt.

9Add in to beans; simmer uncovered for about 20 min.

10Serve over rice or possibly noodles.
