Ingredients

  • 2 vine-ripe tomatoes, seeded & diced
  • 1 bunch cilantro, minced
  • 1 jalapeno, seeded & minced
  • 1 garlic clove, minced
  • 2 tablespoons lime juice
  • salt & pepper, to tase
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 small yellow onion, diced
  • 1 (16 ounce) can black beans, drained & rinsed
  • 14 cup orange juice
  • 1 12 teaspoons cumin
  • salt & pepper, to taste

Directions

    Mix salsa ingredients at least six hours in advance.

    Saute onions in olive oil; add garlic just before onions are done.

    Add the remaining ingredients & simmer until the liquid is reduced.

    Serve immediately.
