  • 2 c. cooked long grain rice
  • 1 (8 oz.) can rinsed, drained black beans
  • 1 1/2 oz. reduced fat Monterey Jack cheese, shredded
  • 1/2 c. Egg Beaters, thawed
  • 1/4 c. finely chopped red bell pepper
  • 1/4 c. finely chopped onion
  • 1 Tbsp. minced fresh cilantro
  • 1 small garlic clove, minced
  • 1/2 c. mild salsa

    Preheat oven to 350°.

    Spray an 8 x 8-inch baking dish with nonstick spray.

    Mix all ingredients, except salsa.

    Pour into baking dish; bake for 20 minutes, or until golden, at 350°.
