- 2 c. cooked long grain rice
- 1 (8 oz.) can rinsed, drained black beans
- 1 1/2 oz. reduced fat Monterey Jack cheese, shredded
- 1/2 c. Egg Beaters, thawed
- 1/4 c. finely chopped red bell pepper
- 1/4 c. finely chopped onion
- 1 Tbsp. minced fresh cilantro
- 1 small garlic clove, minced
- 1/2 c. mild salsa
Directions

1Preheat oven to 350°.

2Spray an 8 x 8-inch baking dish with nonstick spray.

3Mix all ingredients, except salsa.

4Pour into baking dish; bake for 20 minutes, or until golden, at 350°.
