Molasses Bread Pudding Recipe

  • 2 1/4 c. day old bread cubes
  • 1/2 c. raisins
  • 2 Large eggs
  • 2 1/2 c. lowfat milk
  • 1/8 teaspoon salt
  • 1/4 c.molasses
  • 1 tbsp. butter
  • 2 tbsp. sugar
  • 1/2 teaspoon cinnamon

Directions

    Combine bread cubes and raisins in 1 1/2 qt casserole.

    Beat together Large eggs, lowfat milk and salt.

    Blend in molasses.

    Pour over bread mix.

    Dot with butter.

    Combine sugar and cinnamon, sprinkle proportionately over top.

    Bake at 350 degrees for 30 to 35 min or possibly till tip of knife inserted in center comes out clean.

    NOTE: For molasses rice pudding 1 1/2 c. cooked rice may be substituted for bread cubes.

    Bake in 1 1/2 qt casserole or possibly 6 (5 ounce.)
