- 3/4 pounds Black cod (2pieces)
- 2 tablespoon Fish sauce
- 2 tablespoon Sugar
- 4 tablespoon Sherry
- 1/2 tablespoon dried herb du provence
- 2 cloves garlic
- 1 teaspoon Sherry vinegar
- 10 pieces fresh basil leaves
- 20 pieces parsley leaves
- 1/4 cup fresh dill
- 1/4 cup water
Directions

1Combine fish sauce, sherry, sugar, water, herb du provence & pounded garlic in sauce pan

2Bring to gentle boil and simmer for 6 minutes

3strain off sauce (sauce 1) and add sherry vinegar to sauce

4return herbs and garlic to sauce pan and add another 1/4 cup water

5bring to simmer for another 6 minutes till reduced till half

6strain off sauce (sauce 2)

7pour sauce 1 over fish and

8steam for 10 minutes on high steam

9Plate each piece of fish with it's sauce

10Cover with layers of basil, parsley and dill

11top with fried shallots

12Add sauce 2 if more sauce needed
