Ingredients

  • 3/4 pounds Black cod (2pieces)
  • 2 tablespoon Fish sauce
  • 2 tablespoon Sugar
  • 4 tablespoon Sherry
  • 1/2 tablespoon dried herb du provence
  • 2 cloves garlic
  • 1 teaspoon Sherry vinegar
  • 10 pieces fresh basil leaves
  • 20 pieces parsley leaves
  • 1/4 cup fresh dill
  • 1/4 cup water

Directions

    Combine fish sauce, sherry, sugar, water, herb du provence & pounded garlic in sauce pan

    Bring to gentle boil and simmer for 6 minutes

    strain off sauce (sauce 1) and add sherry vinegar to sauce
  4. 4
    return herbs and garlic to sauce pan and add another 1/4 cup water

    bring to simmer for another 6 minutes till reduced till half

    strain off sauce (sauce 2)

    pour sauce 1 over fish and

    steam for 10 minutes on high steam

    Plate each piece of fish with it's sauce

    Cover with layers of basil, parsley and dill

    top with fried shallots

    Add sauce 2 if more sauce needed
