- 1 each Ham Hock
- 1 each Medium Onion, minced
- 1 Salt and Pepper to taste
Directions

1Cover peas with water and soak for 3 hours.

2Drain.

3Cover peas with water and soak overnight, refrigerated.

4In pot large enough to hold everything, caramelize the onions and brown the ham hock.

5Add the drained peas and cover again with fresh water.

6Add salt and pepper.

7Cook on medium for one hour and then two hours on low until they reach the desired texture.
