- 1-3/4 c. all purpose flour
- 1/2 c. unsweetened cocoa
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. dried cranberries
- 1 Tbsp. hot water
- 2 tsp. instant coffee granules
- 3/4 c. buttermilk
- 2/3 c. sugar
- 1/3 c. honey
- 2 Tbsp. vegetable oil
- 2 tsp. vanilla extract
- 1 lg. egg
- Cooking spray
Directions

1Preheat oven to 350°.

2In a large bowl, combine flour, cocoa, baking soda and salt.

3Stir in the cranberries.

4Make a well in the center of the mixture.

5In another bowl, combine the water and coffee granules, then add the buttermilk, sugar, honey, oil, vanilla and egg, stirring well with a whisk.

6Add to the flour mixture, stirring just until moist.

7Spoon the batter into a 8 x 4 inch loaf pan coated with cooking spray.

8Bake at 350° for 50 minutes or until a toothpick inserted in the center comes out clean.

9Cool on a rack for 10 minutes before removing the bread from the pan.

10Cool completely on a wire rack before slicing.
