Blackberry Cake

  • 1 box white cake mix with pudding. 1-3 oz box black raspberry gelatin. 1 cup oil. 1/2 cup milk. 4 eggs. 1 cup blackberries. 1 cup coconut. 1 cup chopped pecans.
  • Icing
  • 1/2 cup soft real butter. 1 lb powdered sugar. 4 to 5 Tbls milk. 1/2 cup blackberries. 1/2 cup coconut. 1/2 cup pecans.

    Cake- mix all items up to the blackberries. once batter is well mixed, fold in the berries, coconut and pecans until the berries break apart. Pour into 2 round greased and floured pans (I use parchment paper on the bottom.). bake at 350 degrees for 25 to 30 minutes. Cool for 10 minutes before removing to racks.

    Icing- Cream butter, mix in sugar and milk. Fold in berries, coconut and pecans until berries break apart. Ice center of cake, then sides and top.
