Blackberry Compote Recipe

Ingredients

  • This condiment can accompany any type of meat:
  • 3 x shallots, peeled and sliced into 1/8 inch-thick rounds
  • 1/2 tsp Coleman's mustard
  • 3 c. cooking Port (Ruby preferred)
  • 1/2 c. red wine vinegar
  • 1/2 tsp cracked black pepper
  • 1 Tbsp. minced fresh ginger
  • 1 c. red currant jelly
  • 3 pt blackberries (keep 2 pints in reserve)

Directions

    In a stainless-steel pot, combine all ingredients and bring to a simmer.

    Continue to simmer till the liquid is reduced by half.

    Mix in the remaining 2 c. of berries.

    Let cold.

    Season with salt and pepper.
