Blackberry Crumble Bars

  • 1 cup butter, softened
  • 1 tsp vanilla extract
  • 3 3/4 cups all-purpose flour
  • 3 1/3 cups sugar
  • 1 1/3 lbs frozen blackberries, thawed
  • 2 tbsp lemon juice
  • 3 tbsp pectin powder
  • 6 oz mascarpone
  • 6 tbsp milk
  • 6 tbsp sunflower oil
  • 4 tsp baking powder
  • None None Whipped cream, to serve

    Using fingertips, knead the butter, vanilla extract, 1 1/4 cups flour and 1 cup sugar to a crumble. Chill.

    Place the blackberries, lemon juice, pectin powder and 2 cups sugar in a saucepan and simmer for 15 mins. Remove from heat and allow to cool, stirring occasionally.

    In a bowl, mix the mascarpone, milk, oil, 1/3 cup sugar and a pinch of salt. Mix the baking powder with 2 1/2 cups flour and stir into the mascarpone mixture in batches. Knead until smooth, wrap in plastic wrap and chill for 1 hour.

    Preheat the oven to 400°F. Grease an 11 x 15 inch cake pan. On a floured work surface, roll out the dough into a 11 x 15 inch rectangle and lay in the pan. Add the blackberries, then top with the crumble. Bake for 20 mins.

    Allow to cool and cut into 24 squares. Serve with whipped cream.
