Blackberry Jam Cake

  • 3 c. sifted flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cloves (ground)
  • 2/3 c. shortening
  • 1 1/2 c. sugar
  • 3 eggs, well beaten
  • 1 c. blackberry jam
  • 1 c. buttermilk

Directions

    Mix flour, baking powder, soda, salt and spices.

    Cream shortening until soft and smooth.

    Gradually add sugar, creaming until very fluffy, then beat in eggs and jam.

    Add flour mixture alternately with milk, beating until smooth after each addition. Turn into 3 greased layer pans and bake in moderate oven (350°) for about 30 minutes.

    Put layers together and spread with Caramel Icing.
