  • 1 lemon
  • 1 tbsp pepper corns
  • 2 bay leaves
  • 1 stalk celery - chopped
  • 1 carrot - chopped
  • 1 large onion - chopped
  • 1 sprig rosemary
  • 1 tbsp thyme
  • 4 cup water
  • 1 1/2 cup kosher salt
  • 3/4 cup brown sugar

    Add all ingredients & bring water to a boil

    Let cool

    Rinse turkey thoroughly

    Place turkey in container large enough to cover with brining liquid

    Add enough cold water to cover

    Refrigerate 16-24 hrs

    Remove & rinse
