- 2 (6 oz.) Alaskan halibut fillets (skinless)
- 2 Tbsp. Chef Paul Prudhomme's Blackened Redfish Magic
- 1 Tbsp. olive oil
- 1/2 c. Chardonnay
Directions

1Season both sides of the Alaskan halibut with the seafood seasoning. Heat a large skillet on high heat and add the oil. Place the Alaskan halibut fillets in the hot skillet and blacken for 3 minutes per side. Add the Fetzer Sundial Chardonnay and simmer until wine has evaporated. Serve immediately. Serves 2.
