- 1 tsp. paprika
- 1/2 tsp. each: crumbled dried sage, ground cumin, garlic powder and granulated sugar
- 1/2 tsp. salt
- 1/4 tsp. ground red pepper (cayenne)
- 1/4 tsp. onion powder
- 4 catfish fillets
- nonstick cooking spray
- 1 tsp. olive oil
- lemon slices
Directions

1Put spices in a 1 gallon food storage bag.

2Close bag and shake well.

3Put 1 fillet in bag at a time and shake.

4Coat large nonstick skillet with cooking spray.

5Add oil and heat over medium heat.

6Add catfish fillets, skinned side up, and cook 4 to 5 minutes until lightly blackened.

7Turn with spatula.

8Cook 4 to 5 minutes longer, until fish feels firm.

9Serve with lemon slices.
