- 1 pound Catfish Fillets
- 2 Tablespoons Oil
- 1 Tablespoon Garlic Powder
- 1 Tablespoon Onion Powder
- 2 teaspoons Thyme
- 1 teaspoon Black Pepper
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Paprika
- 1 teaspoon Oregano
- 1/2 teaspoons Salt
Directions

1Place fish in a large Ziploc bag and drizzle with oil.

2Let stand in the refrigerator for 30 minutes.

3Combine herbs and spices in a shallow dish.

4Heat a cast iron skillet till VERY hot.

5(Tip: Turn the skillet upside down over the heat for a few minutes to really crank it up.)

6Turn vent fan to HIGH.

7Drain oil from fish, then dip fish in seasoning and turn to coat evenly.

8Cook fillets for 3 to 4 minutes per side, turning once.
