Blanched Spinach With Soy Sauce

  • 7-8 oz bag of baby spinach leaves
  • soy sauce

    Bring a pot of water to a boil.

    Put the washed spinach in the boiling water all at once and boil 30 seconds (If you use larger spinach leaves boil 1 minute). Immediately drain water off, run cold water in the pot to cool, drain again. Take the spinach leaves in your hands and squeeze into one or two 'logs'. Slice the log(s) into pieces and sprinkle with soy sauce. Good immediately or cooled to room temp.
