- 1 Handful Fresh, Baby Spinach
- Sea Salt, to taste
- Raw Goat Cheese (or Dairy-free Alternative), To Taste
Directions

1Preheat oven to 375°F.

2Blend eggs with a handful of spinach in your blender until smooth. Pour mixture into a small pan and cook in oven for approximately 10 minutes, or until edges start to pull away from pan. Sprinkle with sea salt and some raw goat cheese. Fold.

3Put omelette back in oven for 2-3 minutes to set. Enjoy!
