  • 1 tomato
  • 1/8 to 1/4 red onion
  • 1/2 avocado or 1 Tbsp extra virgin olive oil
  • 1/4 zucchini or yellow squash
  • a few sprigs of cilantro (optional)
  • 1 Tbsp lemon juice
  • water to achieve desired consistency
  • pinch of sea salt and pepper

    Blend all ingredients until smooth. Use minimal water and olive oil to achieve a consistency for blending. Serve immediately for best results.
