  • 4 cups hulled, chopped strawberries
  • 1/4 cup lime juice
  • 1 cup sugar
  • 1/2 cup peeled and coarsely chopped fresh ginger
  • 12 Thai bird chiles, split

Directions

    Puree strawberries and lime juice in blender until smooth.

    Strain through fine sieve, and discard seeds.

    Bring sugar, ginger, chiles, and 2 cups water to a boil in small saucepan.

    Reduce heat to low, and simmer, stirring until sugar has dissolved.

    Remove from heat, let stand 10 minutes, then strain, and discard solids.

    Cool.

    Whisk strawberry-lime juice and sugar mixture together in pitcher.

    Serve over ice.
