  • 16 to 20 cherry tomatoes
  • 1 lb. bacon, cooked and crumbled
  • 1/2 c. mayonnaise or salad dressing
  • 1/3 c. chopped green onion
  • 3 Tbsp. grated Parmesan cheese (optional)
  • 2 Tbsp. snipped fresh parsley

Directions

    Cut a thin slice off the top of each tomato.

    Scoop out and discard pulp.
  3. 3
    Invert the tomatoes on a paper towel to drain.
  4. 4
    Mix the rest of ingredients and fill tomatoes.

    Refrigerate several hours.

    Makes 16 to 20 tomatoes.
