- 8 slices bacon, fried crisp, crumbled and divided
- 1/3 c. shredded Monterey Jack cheese
- 1 c. chopped tomato
- 2/3 c. chopped onion
- 2 Tbsp. chopped parsley
- 1 Pet-Ritz pie crust shell
- 1 egg
- 2/3 c. Pet evaporated milk
- 1 tomato, thinly sliced
- 1/3 c. shredded lettuce
Directions

1Preheat oven and baking sheet to 350°.

2In a small bowl, combine half the bacon, cheese, chopped tomatoes, onion and parsley.

3Spoon into pie crust.

4Beat egg with evaporated milk. Slowly pour over bacon mixture.

5Arrange sliced tomato on top of pie.

6Bake on preheated baking sheet for 35 minutes (30 minutes for regular crust) or until pie crust has browned or until knife inserted in center comes out clean.

7Let stand for 15 minutes; top with shredded lettuce and remaining bacon.

8Serve.
