- 8 ounces blue cheese
- 1 cup (2 sticks) unsalted butter, room temperature
- 2 French bread baguettes or 4 sourdough flutes (2 pounds total), halved lengthwise
- Chopped celery tops

1Blend cheese and butter in processor until smooth.

3Cover and refrigerate.

4Bring to room temperature before using.)

5Preheat broiler.

6Broil bread crust side up until crisp.

7Turn and broil cut side until light brown.

8Spread cheese mixture over cut side of bread.

9Sprinkle liberally with pepper.

10Broil until cheese bubbles and begins to brown.

11Remove from broiler and sprinkle bread with celery.

12Cut crosswise into 1-inch pieces.
