  • 1 cup (2 sticks) butter, chopped, at room temperature
  • 3/4 cup plus 1 tbsp granulated sugar
  • 1 None orange, peel finely grated and orange juiced
  • 3 None eggs
  • 1 3/4 cups self-rising flour, sifted
  • 1 cup blueberries
  • None None Powdered sugar, to dust

    Preheat the oven to 350°F. Lightly grease and line an 8-inch square baking pan with parchment paper.

    Beat butter and 3/4 cup of the granulated sugar in a large bowl with an electric mixer, until light and fluffy. Beat in orange peel.

    Add eggs, one at a time, beating well after each addition. Add a little flour if mixture begins to curdle.

    Lightly fold in flour and orange juice. Fold in berries. Spoon into prepared pan, smoothing top. Sprinkle with remaining 1 tbsp granulated sugar.

    Bake for 35-40 mins, until a toothpick inserted into center comes out clean. Cool in pan for 10 mins. Remove from pan; cool completely on a wire rack. Dust with powdered sugar to serve.
