- 6 large egg whites, fork-beaten
- 1 12 cups icing sugar
- 12 cup all-purpose flour
- 1 cup fresh blueberries
- 2 teaspoons finely grated lemons, zest of
- icing sugar, for dusting tops (optional)

1Melt margarine in large saucepan.

3Stir until just combined.

4Grease muffin tins with cooking spray.

5Fill cups 2/3 full with batter.

6Bake in 375 degree F (190 degree C) oven for about 25 minutes until wooden toothpick inserted into centre of cake comes out clean.

7Let stand in pan for 10 minutes before removing to wire rack to cool.

8Dust with icing sugar (optional).
