Blueberry Macaroon Bars

  • 6 tbsp (3/4 stick) unsalted butter, softened
  • 3/4 cup sugar
  • 1 None egg
  • 3/4 cup flour
  • 1/4 cup self-rising flour
  • 1 tbsp custard powder or vanilla pudding mix
  • 1/2 cup blueberry jam
  • 2 None egg whites, lightly beated
  • 2 cups flaked coconut

Directions

    Preheat the oven to 350°F. Grease and line a 12 x 8-inch baking pan with parchment paper, extending paper above long sides for handles.

    Beat the butter, 1/2 cup of the sugar and egg in a medium bowl with an electric mixer until combined. Stir in the sifted flours and custard powder. Spread into the prepared pan. Top with jam.

    For the coconut topping, combine the egg whites, coconut and remaining 1/4 cup sugar in a medium bowl. Sprinkle over the jam.

    Bake for about 40 mins topping is browned. Cool in pan on a wire rack. Cut into bars.
