- 1 1/2 cups unbleached flour
- 1 cup fresh or frozen blueberries
- 1 egg white mixed with 1 Tbsp. oil
- 1/2 cup skim milk
- 2 Tbsp. oil
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup sugar
Directions

1Preheat oven to 400°.

2Spray muffin tins with Pam or line with paper cups.

3Mix 1/4 cup flour with blueberries.

4Set aside. Mix liquid and dry ingredients separately; then combine, mixing just enough to moisten.

5Fold in blueberries.

6Fill each muffin tin 2/3 full.

7Bake 20 - 25 minutes.

8Makes 10 - 12 muffins.
