- 3/4 c. milk
- 1/2 c. vegetable oil
- 2 c. flour
- 1/3 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
- 1 c. fresh blueberries or 3/4 c. frozen, drained well
Directions

1Heat oven to 400°.

2Bake in cupcake pans and grease bottoms only.

3Beat egg; stir in milk and oil.

4Stir in remaining ingredients all at once, just until the flour is moistened (batter will be lumpy).

5Fill muffins about 3/4 full.

6When baked, remove immediately from pan.

7Makes about 1 dozen.
