  • 3 Tbsp. shortening
  • 3 Tbsp. sugar
  • 2 well beaten eggs
  • 2 c. flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 c. fresh blueberries, washed and drained

    In bowl, cream shortening and sugar until fluffy.

    Stir in eggs.

    Sift flour, baking powder and salt together.

    Add this mixture a little at a time alternately with milk.

    Beat until smooth.

    Stir in blueberries.

    Fill greased muffin tins 2/3 full. Bake in oven at 450° for 20 to 30 minutes or until golden brown.
