- 2 (9-inch) pie crusts
- 5 c. fresh blueberries or 1 pkg. frozen blueberries, thawed
- 1 c. sugar
- 1/4 c. all-purpose flour
- 1/4 tsp. salt
- 1 tsp. grated lemon peel
- 1 Tbsp. lemon juice
- 2 Tbsp. butter or margarine
Directions

1Rinse and drain blueberries.

2Put into bowl and add sugar, flour, salt and lemon peel; toss lightly.

3Pour into unbaked pie shell.

4Drizzle lemon juice over filling.

5Dot with butter.

6Cover with top crust.

7Seal and flute edges.

8Prick top crust with fork. Bake at 400° for 40 minutes.

9Cool.

10Serve with ice cream or whipped cream.
