Blueberry Quick Bread

Ingredients

  • 3 cups flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 14 teaspoon baking soda
  • 12 teaspoon salt
  • 1 egg, beaten
  • 1 23 cups milk
  • 14 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 teaspoon lemon peel, grated
  • 2 cups fresh blueberries
  • 12 cup pecans, chopped

Directions

    Mix dry ingredients (up to and including salt) and set aside.

    In another bowl, mix the wet ingredients (from the egg to the vanilla).

    Add wet ingredients to dry and stir just until evenly moistened.

    Fold in lemon peel, blueberries and pecans.

    Spoon into greased loaf pan.

    Bake at 350 degrees for 60-75 minutes or until done (toothpick comes out clean).
