Blushing Onion Soup

- 4 c. thinly sliced onions
- 1 clove garlic, finely chopped
- 1/4 c. margarine or butter
- 1 (46 oz.) can tomato juice
- 1 c. water
- 2 tsp. beef flavor instant bouillon or 2 beef bouillon cubes
- 2 tsp. parsley flakes
- 8 slices French bread, toasted
- 2 c. (8 oz.) shredded Mozzarella
Directions

1In large kettle or Dutch oven, cook onions and garlic in margarine until tender.

2Stir in tomato juice, water, bouillon and parsley.

3Bring to a boil; reduce heat.

4Simmer, uncovered, 20 to 30 minutes, stirring occasionally.

5Ladle into 8 ovenproof soup bowls.

6Top with bread slices and sprinkle generously with cheese. Broil 2 to 3 minutes or until cheese melts.

7Serve immediately. Makes 8 servings.
