Blushing Onion Soup

Ingredients

  • 4 c. thinly sliced onions
  • 1 clove garlic, finely chopped
  • 1/4 c. margarine or butter
  • 1 (46 oz.) can tomato juice
  • 1 c. water
  • 2 tsp. beef flavor instant bouillon or 2 beef bouillon cubes
  • 2 tsp. parsley flakes
  • 8 slices French bread, toasted
  • 2 c. (8 oz.) shredded Mozzarella

Directions

    In large kettle or Dutch oven, cook onions and garlic in margarine until tender.

    Stir in tomato juice, water, bouillon and parsley.

    Bring to a boil; reduce heat.

    Simmer, uncovered, 20 to 30 minutes, stirring occasionally.

    Ladle into 8 ovenproof soup bowls.

    Top with bread slices and sprinkle generously with cheese. Broil 2 to 3 minutes or until cheese melts.

    Serve immediately. Makes 8 servings.
