Boiled Fruit Cake

  • 6 oz. mixed dried fruit
  • 3 oz. margarine
  • 3 oz. soft brown sugar
  • 1 tsp. mixed spice (optional)
  • 8 fluid oz. water
  • 8 oz. plain flour
  • 1 tsp. bicarbonate of soda
  • 1/2 tsp. salt

Directions

    Put fruit, margarine, sugar, spice and water in saucepan. Bring to boil.

    Boil for 3 minutes.

    Cool.

    Add flour, bicarbonate of soda and salt.

    Beat well.

    Pour into a 6 inch greased and lined cake tin.

    Bake at 350° for 1 hour.
